You know the one. The giant open space in Latham on Troy Schenectady Rd next to Vent Fitness that has been filled with a bunch of temporary businesses now has permanent plans.
Paul Dimm, a New Jersey chef, has plans for the 15,000 square foot space, a restaurant called Scarlet Knife. This will be the first time Dimm has owned a restaurant and hopes for this to open mid-May or June.
Dimm spoke to the Times Union saying that “The massive brick building will be converted into an upscale indoor dining area and patio serving what the business says will be farm-to-table American fare with a hint of international flavors and the ability to seat roughly 300 people, about 220 inside and the rest outside.”
The restaurant will have an open kitchen plan so customers can look inside and watch them cook as well as a green patio and fireplace. Speaking of the green patio, I love the fact that they’ll be naming the space the “Garden Center” as a throwback to it being an old K-Mart.
“The Scarlet Knife will be an experience like no other in the Capital Region,” Townsend said.
The Scarlet Knife will bring in influences from the Jersey Shore and hopes to utilize the Troy Waterfront Farmer’s Market. It won’t just be a restaurant, though, it’ll also be home to a dessert room. I can’t wait to make a reservation for that!
