A new local business is looking at a February opening and coming to Schenectady.
29-year-old Army veteran William Knight is following his decade-long career in the military with some juice. According to The Daily Gazette, Knight grew up on Long Island but would frequently visit his mother in Schenectady and noticed the lack of healthy eating locations in the area.
Elite Juice Parlor will be coming to 1132 Albany St. and planning to open in February 2022.
Along with juices, Knight is hoping to eventually serve fresh salads. The 1500 square foot space was previously home to various short-term businesses. Originally planning to open on Long Island, Knight decided on Schenectady due to the lack of competition in the area and the fact that he thought it needed healthier options.
To start, Knight will run and work in the location by himself but has plans to grow much bigger.
Mary Moore Wallinger, chair of the Planning Commission, said “I hear from community members all the time that there’s a real lack of access to fresh healthy foods…I really appreciate this being brought to a neighborhood where we know this is needed.”
