One of my favorite things to do is walk around the various farmer’s markets and find new businesses. At a recent Schenectady Greenmarket, I was introduced to Quigley’s Cakes.
Quigley’s Cakes started in 2013 by Sandra Quigley. Quigley is an artist and sculptor who has found joy in creating cakes. According to their website, “She takes no greater joy than in creating a sculpted, 3D edible piece of art, from lion heads to Viking ships. She also bakes for fellow sci-fi and fantasy fans at many conventions within a four-hour radius of Schenectady, NY.”
Based in Schenectady, Quigley has a large offering of kinds of cake and buttercream to choose from as well as fillings and toppings. She also offers vegan, sugar-free, gluten-free, egg-free, or dairy-free.
Quigley’s Cakes can be found every Sunday through the end of October 2021 at the Schenectady Greenmarket on Jay Street from 10am to 2pm. Four cupcake flavors are offered that change each week. The week I went, there was chocolate, vanilla, mimosa, and pina colada. Each cupcake was a perfect little serving to try each of the flavors. Thankfully, she has variety boxes already made up because I’m incredibly indecisive. Though they all were great, I loved the vanilla cupcake. It wasn’t plain, they used special vanilla that really brought out a great flavor. Check them out at a future Greenmarket to see what flavors they have that week.
