We haven’t gotten an official announcement but thankfully my job search brought me to learning that one of my favorite Vermont eateries is coming to Albany!
If you’re ever looking for a day trip or weekend getaway and haven’t looked into Vermont, you’re missing out. We’re so close and there are so many great places to visit just over the state border.
The Skinny Pancake is a popular breakfast and brunch location in Burlington, VT. The first skinny pancake was served in June of 2003 even though owners, Jonny and Benjy Adler, had no experience. After getting tired of serving their food out of a cart, they decided to open their first location in Burlington on the waterfront in June 2007. Now, it seems, after growing their brand all over Vermont, they have their eyes set on Downtown Albany.
There’s no mention of an Albany location on their website, but Indeed.com gave away their plans. While I was searching the job market, I was confused when I saw one of my favorite Vermont places was advertising for some help in Albany, until I opened it. “The Skinny Pancake is growing into downtown Albany this summer! We are seeking an experienced, food service professional to join us as General Manager and help lead and coordinate our opening operations and beyond.”
I still haven’t been able to find their proposed location but this will be their first New York storefront and if their food is just as delicious as it was when I used to visit my cousin at the University of Vermont, the Capital Region will be in for such a (skinny) treat!
